Eventually you notice patterns and can deduce the meaning of various data tags, as well as how items are structured within the file. If you want to do some really crazy things (such as making throwing weapons out of Colossus heads or editing/adding gem slots) the best bet is simply to throughly examine the player_0X.seria file. The explanation is complex although the procedure simple. Some people from much earlier have asked about some other things, such as making weapons into "armor" to wield more than two weapons. (also, don't forget that profile_0X.seria is "save data", while player_0X.seria is "inventory data")

I don't know whether the default profile seria is available on Windows users, but I do know that you can get to it from inside Hammerfight.app's contents if you're on a Mac. You have to edit the default save instead (the save that is essentially a template for all new saves).

(One glitch, which I have yet to discover the source of, will cause you to take damage over time until you die. You can make some super awesome combinations with this. Test out your overcharged gem ingame! Sometimes it will cause glitches if you set it too high, so play around with the options until you get it to work. When you see the name of the gem, find the m_value for that gem.
If you don't know what the name is, search for "m_classname=Improvement" In player_01, use Find to locate the name of the gem you wish to edit. Make sure that this weapon is equipped on your character when you exit. In Hammerfight, place singing stones of your choice in your weapon.
